Luis J. Loyola is an Associate Professor in the Department of Sociology at Manhattan College, Riverdale, N.Y. He did fieldwork among Tzeltal-speaking Mayan Indians in Chiapas, Mexico. His professional interests are in the fields of race and ethnic relations, political economy, anthropology of drugs, visual anthropology and anthropology of food. His current interest examines the inter-connection of class and power (or lack of it), through Puerto Rican cuisine as dynamic symbols manifested in the contemporary New York City restaurant scene.
